Memorial Day Slaw

Looking for an awesome side dish for your Memoiral Day BBQ?  This sun-dried tomato chicken slaw is one of my favoites.  Takes only 10 minutes to prepare and transports easily to any party.  The cabbage and light dressing make it a wonderful spring and summer side dish.  Make a little extra, because I guarentee whatever you serve at the party will be gone.  Even the kidos will think it’s yummy!

Ingredients:
2 cups cooked chicken breasts, cut into small cubes
1/2 cup sun-dried tomatoes, sliced
1/2 Fiji or gala apple, diced
4 cups purple cabbage, shredded
1/4 cup raw almonds, sliced
3 tablespoons extra virgin olive oil
1.5 tablespoons balsamic vinegar
1 tablespoon dried oregano
freshly ground black pepper to taste

Directions: Mix all ingredients together and serve.

Serves 2-4 (2 entrees or 4 side dishes)
